6 chicken bouillon cubes
6 c. water
1 c. diced onion
1 c. diced celery
1 c. diced carrots
1 c. cubed potatoes
1/2 head cauliflower
1/2 head broccoli
Dissolve bouillon cubes in boiling water. Add onion and celery Add carrots and potatoes Add cauliflower and broccoli; place in crock pot on high for 2 hours or low for 4 hours or until vegetables are cooked remove from heat. Pour off approximately 2/3 of the liquid (basically leaving just enough to liquid to half the level with the vegetables) into a separate bowl and set aside to freeze and use as vegetable broth at another time. Using a hand mixer (I like to have a bit larger chunks a food processor or blender would also work) mix and basically chopping vegetables into smaller chunks. When desired consistency is made add cheese sauce and serve.
Make White Sauce
Whisk together 1/4 cup melted butter and 1/4 cup flour. Slowly whisk in 1 1/2- 2 cups milk or heavy cream until smooth. Microwave (cook 2 minutes and then whisk, repeat 2 minutes 3 times for a total cooking time of 6 minutes ) or cook on range (stirring constantly so it doesn't scorch) until mixture thickens. Salt to taste. (Makes about 1 1/2 - 2 cups sauce)
Cheddar Cheese Sauce: Add 1 cup of Cheddar Cheese to White Sauce
I love this white sauce by microwave..It's much faster and easier than on the stove.
You can also add more milk to white sauce to stretch it farther.
