

It is a very simple process the chicken comes refrigerated not frozen in 4 10pound bags.
Step #1 clean and sterilize bottles (I do this by running them through a cycle in the dish washer)
Fill bottles with meat leaving about 1/2 to 1" space between meat and the top of the jar.


Then add 1 teaspoon salt to quarts and 1/2 teaspoon to pints of Natural non-iodized salt to each jar.
Wipe off mouth of jar with clean wet clothe removing any salt or other contaminates from the top of jar. This is very important for a clean tight seal.
Bring a small pan of water with the lids as directed on your box (I do it for approximately 10 min.Then add lids to jars and seal with rings. Fill pressure cooker to 1"depth of plain water. That's it no more.


Set jars in pressure cooker and fasten pressure lid securely. Double check your seal and weight are clean and working. ( You can have your pressure gage checked at The Mending Shed in Orem for free) Bring pan to 15 Pounds of pressure for 90 minutes in our area. Please check with local extension services for other locations. It is very important to stay right in the kitchen when pressure canning. You need to keep pressure exactly correct and the pressure can vary during process time so you will need to adjust your stove to either increase or decrease heat.
When finished turn off stove and let it sit until pressure is down to zero. Do not move or force pressure down faster. It needs to adjust it self. This may take between between 1/2 hour to 45 minutes. When pressure cooker is ready remove lid carefully. Then keeping jars straight up and remove them from canner and place on flat surface to cool. Do not touch tops of lids. As bottles cool you will hear the noise of the bottle sealing. They will all seal at different times.
When bottles are cool date jars and place in cool dark storage.
